Cornmeal nuffins are one of the easiest recipes ever and work out every time. I love these in the winter with a nice steamy bowl of soup or even a bowl of  chili. Heck who am I kidding, it is lovely all by itself warmed with a pat of butter or creamed cheese.

Makes 12 muffins – 3 FS points (WW)

2 eggs

1 cup yellow cornmeal

1 tsp olive oil

1/2 tsp salt

1 tbsp baking powder

1 can creamed corn

1 tbsp maple syrup

1/4 cup greek yogurt

mix all ingredients, lightly spray muffin tin and divide batter into 12 muffin cups. Cook 400 F. for 20 minutes.
