Sometimes I get a little over zealous buying veggies, espcially when they are on sale. 😃 Last week i saw cauliflower on sale so jumped on it, not thinking about the half head I was still working on. Since there are only two of us in the house and one doesnt like it, well it sometimes is a challenge to eat them all before they start to get funky. Yes I buy that much. LOL!

So today i had a craving for some fish and noticed my head of cauliflower in the second fridge starting to look a little sad so decided It would make a great side dish.

Cauliflower is one of those foods that is really delicious roasted and with the basic rules you can spice it up however you want. The trick is to roast it hot and fast. It makes a great side dish or even a snack or appetizer with some dip on the side.

Today I opted for spicy cauliflower bites with a light fat free yogurt dip to go with my haddock and unstuffed cabbage roll casserole (a recipe for another day) . This was definitely a great choice. So i bought the hubby a crappy burger and fries (his choice, his words after eating it- and i had even had offered to make it for him!) and enjoyed my home made dinner. 😃

Now a note about my baking pan. I have had this pan for so long, i dont remember not having it, so I dont consider it old, I consider it very well seasoned. 😎

Spicy Cauliflower Bites

Males 4 servings .Weight watchers 2 FS points per serving.  Preheat oven to 450 F

1 head of cauliflower cut into florets

2 TBSP virgin olive oil

1/4 tsp salt and pepper

1/2 tsp onion powder

1/2 tsp garlic powder

1 tsp everything bagel spice

1/2 tsp Hungarian paprika

1/2 tsp chili powder

A few drops of Sriracha sauce  (optional)

Drizzle olive oil over the cauliflower. Mix the spices together and sprinkle over the cauliflower. I used my hands to toss the cauliflower with the spices to make sure it is mixed thoroughly. Add a few drops of sriracha sauce if desired and mix again.   Spread  the cauliflower on a cookie sheet and roast for 20-25 minutes. Stir once or twice while cooking. I try to catch it when it is still a bit firm for dipping.

Remove from oven and place on a plate or basket. Serve with a nice Greek yogurt dip.( recipe below) fat free yogurt for the diet conscious. 😀

Greek Yogurt Dipping Sauce

i like to keep this dip nice and mild to compliment the bold spices in the cauliflower.

1/4 cup of fat free Greek yogurt

1 TBSP 3 cheese ranch dressing

1 tsp parmesian or finely crumbled blue or feta cheese

Mix the above 2 ingredients. I will leave you to add any more spices if you want but this was perfect as it was for the spicy cauliflower bites. I think one  piece of roasted garlic would be awesome to add to this dip. 😃
